A Simple Cherry Galette Recipe

Cherries! A fruit so delicious and gorgeous they have been referenced a million times in fashion. They are in season RIGHT NOW and here is a simple but delicious recipe you can impress your friends with. Serve it with cream or ice cream or on its own. You choose. 

You will need: pre-rolled short crust pastry (or make your own!), 400g pitted and halved cherries, 200g brown sugar, half a lemon’s worth juice, pinch of salt, one beaten egg.

Instructions: Heat the oven to 375 degrees and line a baking tray with parchment paper. In a bowl, put the cherries, the sugar, lemon juice and a pinch of salt. Leave it for a while. Place the dough on a counter top dusted with flour (or onto the parchment paper) and roll it out into a circle about 25cm in diameter. Place the cherries in the middle and spread them out so they’re not in a big pile. Leave a 3-inch border around the edge and fold it over the pastries, creating pleats all the way round. Brush the dough with the beaten egg and sprinkle with a tsp of sugar. In the oven it goes! Wait maybe an hour, maybe less, until it is all golden and delicious. It’s sort of rustic so don’t worry too much about how it looks! Enjoy! Be happy!
